Food Establishment Inspection Report
Pursuant to Title 25-A of the District of Columbia Municipal Regulations

|5. - The establishment procedures for responding to a contamination event due to vomiting or diarrhea lists bleach as the disinfectant however bleach is not used in the establishment. Another set of procedures was provided however the disinfectant's EPA registration number could not be determined initially. (Corrected On Site)||504.1||A licensee shall ensure that its food establishment shall have procedures for employees to follow when responding to vomiting or diarrheal events that involve the discharge of vomitus or fecal matter onto surfaces in the food establishment. The procedures shall address the specific actions employees must take to minimize the spread of contamination and the exposure of employees, consumers, food, and surfaces to vomitus or fecal matter. |10. - There is no handwashing signage at the handwashing sinks. (Correct Violation Within 14 Calendar Days)||3004.1||A sign or poster that notifies food employees to wash their hands shall be provided at all handwashing sinks used by food employees and shall be clearly visibly to food employees.|
|10. - There is no hot water (at least 100 degrees Fahrenheit) at the handwashing sink at the service line. (Correct Violation Within 5 Calendar Days)||2402.1||A handwashing sink shall be equipped to provide water at a temperature of at least thirty-eight degrees Celsius (38 degrees C) (one hundred degrees Fahrenheit (100 degrees F)) through a mixing valve or combination faucet. |10. - There are no paper towels at the handwashing sink at the entrance to the kitchen. (Corrected On Site)||3002.1||Each handwashing sink or group of adjacent sinks shall be provided with: (a) Individual, disposable towels.|
|24. - The establishment did not provide the written procedures for using time without temperature as a public health control. (Correct Violation Within 5 Calendar Days)||1009.1||Except as specified in Section 1009.4, if time without temperature control is used as the public health control for a working supply of potentially hazardous food (time/temperature control for safety food) before cooking, or for ready-to-eat potentially hazardous food (time/temperature control for safety food) that is displayed or held for sale or service: (a) Written procedures shall be prepared in advance, maintained in the food establishment and made available to the Department upon request and shall specify: Pf (1) Methods of compliance with Section 1009.2(a) through 1009.2(c) or Section 1009.3; Pf and (2) Methods of compliance with Section 1003 for food that is prepared, cooked, and refrigerated before time is used as a public health control. |47. - The green cutting boards are badly scratched and have numerous grooves. (Correct Violation Within 14 Calendar Days)||1801.1||Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.|
|56. - There is insufficient lighting (blown bulb) in the reach-in refrierators (SW-F, #30, and #40).
