21. - Temperature control for safety foods at both hot dog rollers observed holding at temperatures below 135F.(CORRECT VIOLATION WITHIN 5 CALENDAR DAYS)  1005.1 Except during preparation, cooking, or cooling, or when time is used as the public health control as specified in Section 1009, potentially hazardous food (time/ temperature control for safety food) shall be maintained: (a) At fifty-seven degrees Celsius (57 degrees C) (one hundred thirty-five degrees Fahrenheit (135 degrees F)) or above, except that roasts cooked to a temperature and for a time specified in Section 900.2 or reheated as specified in Section 906.5 may be held at a temperature of fifty-four degrees Celsius (54 degrees C )(one hundred thirty degrees Fahrenheit ((130 degrees F)) or above. 33. - The internal ambient temperature of the under-counter freezer at the service line observed at 30F, causing the frozen foods inside to thaw.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1000.1 Stored frozen foods shall be maintained frozen.  
40. - Employees at the service line observed wearing no hair restraints when handling exposed foods.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  502.1 Food employees shall wear clean and effective hair restraints, such as hairnets or beard nets, if appropriate, and clothing that covers body hair that are designed and worn to effectively keep hair from contacting exposed food, clean equipment and utensils, linens, and unwrapped single-service and single-use articles. Hats, caps, scarves or other head covers are acceptable if the hair is contained to prevent contamination. Hair spray and tying back the hair in a ponytail are not effective hair restraints.  
47. - The warewashing area handwashing sink observed loosely attached to the wall.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1701.1 Equipment that is fixed because it is not easily movable shall be installed so that it is: (a) Spaced to allow access for cleaning along the sides, behind, and above the equipment; (b) Spaced from adjoining equipment, walls, and ceilings a distance of not more than one millimeter (1 mm) or one thirty-second of an inch (1/32 in.); or (c) Sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage.  
47. - Thermometers supplied to the walk-in refrigerator and the toppings refrigerator observed in disrepair.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1816.3 Ambient air temperature, water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.  
47. - Cardboard observed lining several shelves inside the walk-in refrigerator.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1408.1 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion resistant, nonabsorbent, and smooth material.  
49. - Soil accumulation observed on the shelves of the cabinet beneath the soda fountain machines.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1900.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  
51. - The garbage disposal unit observed in disrepair.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  2418.1 A plumbing system shall be: (a) Repaired according to the D.C. Plumbing Code (2008) incorporating the International Plumbing Code 2006, as amended by the D.C. Plumbing Code Supplement (subtitle F of 12 DCMR); and (b) Maintained in good repair.
