OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
16. - The sanitizing cycle temperature of the chlorine sanitizing solution in the dishwash machine in the kitchen did not reach the minimum temperature (130 degrees Fahrenheit) specified on the data plate. (Correct Violation Within 5 Calendar Days)  1813.2 A chlorine solution shall have a minimum temperature based on the concentration and pH of the solution as listed in the following chart: P CONCENTRATION RANGE = 25 mg/L - 49 mg/L (if pH 10 or less, minimum temperature = 49 degrees C (120 degrees F); if pH 8 or less, minimum temperature = 49 degrees C (120 degrees F)]; CONCENTRATION RANGE = 50 mg/L - 49 mg/L (if pH 10 or less, minimum temperature = 38 degrees C (100 degrees F); if pH 8 or less, minimum temperature = 24 degrees C (75 degrees F)]; MINUMUM CONCENTRATION = 100 mg/L (if pH 10 or less, minimum temperature = 13 degrees C (55 degrees F); if pH 8 or less, minimum temperature = 13 degrees C (55 degrees F)].  
38. - There is a gap between the double doors. (Corrected On Site)  2912.1 Except as otherwise specified in Sections 2912.2 through 2912.5, the outer openings of a food establishment shall be protected against the entry of insects and rodents by: (a) Filling or closing holes and other gaps along floors, walls, and ceilings.  
48. - There is no visible data plate on the glass washing machine at the bar. (Correct Violation Within 14 Calendar Days)  1525.1 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (a) Temperatures required for washing, rinsing, and sanitizing; (b) Pressure required for the fresh water sanitizing rinse unless the machine is designed to use only a pumped sanitizing rinse; and (c) Conveyor speed for conveyor machines or cycle time for stationary rack machines.  
48. - The dishwash machine's wash cycle did not reach the minimum temperature of 130 degrees Fahrenheit as specified on the data plate. (Correct Violation Within 5 Calendar Days)  1809.2 The temperature of the wash solution in spray-type warewashers that use chemicals to sanitize shall not be less than forty-nine degrees Celsius (49 degrees C) (one hundred twenty degrees Fahrenheit (120 degrees F)). 48. - The dishwash machine's wash and sanitizing cycle temperatures are not reaching the minimum specified temperatures. (Correct Violation Within 5 Calendar Days)  1804.1 A warewashing machine and its auxiliary components shall be operated in accordance with the machine's data plate and other manufacturer's instructions.  
51. - The garbage disposal unit (food waste grinder) is out of order. (Correct Violation Within 5 Calendar Days)  2418.1 A plumbing system shall be: (b) Maintained in good repair.  
56. - There is grease residue on the ventilation hood filters. (Corrected On Site)  3203.1 Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.

NOT APPROVED - Establishment is not approved for the issuance of Restaurant license. The licensee must correct all violations listed on the inspection report.
