OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
10. - Employee were unable to properly wash hands due to no water.  2402.1 A handwashing sink shall be equipped to provide water at a temperature of at least thirty-eight degrees Celsius (38 degrees C) (one hundred degrees Fahrenheit (100 degrees F)) through a mixing valve or combination faucet. Pf  
10. - Truck was not equipped with disposable paper towels. Hand sink was blocked filled with items. Soap was not accessible to the hand sink.  2414.1 A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf  
22. - Improper cold holding. All cold units and cold food items must be maintained at 41.0 degrees or below at all times. Cold unit and several cold food items were not in compliance at time of visit.  1005.1 Except during preparation, cooking, or cooling, or when time is used as the public health control as specified in Section 1009, potentially hazardous food (time/ temperature control for safety food) shall be maintained: (b) At five degrees Celsius (5 degrees C) (forty-one degrees Fahrenheit (41 degrees F)) or less. 36. - No thermometer was observed in the reach in unit.  1524.2 Cold or hot holding equipment used for potentially hazardous food (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one (1) integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display, except as specified in Section 1524.3.  
37. - Working containers were not labeled as to content.  803.1 Working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the food, except that containers holding food that can be readily and unmistakably recognized, such as dry pasta, need not be identified.  
49. - Cooler was unclean.  1900.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  
50. - Truck had NO WATER.  2305.2 Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food establishment. Pf

SUMMARY SUSPENSION WAS ISSUED DUE TO TRUCK HAD NOT WATER AT TIME OF VISIT. A 100.00 dollar restoration fee must be paid at 899 North Capitol street NE. If you have any questions please contact the supervisor Mrs. Coleman at 202-442-5928.
