OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
21. - Temperature control for safety food (mashed potatoes) temp below 135 degrees F. The pan was not completely on the hot holding surface. Parts of the food was not at temperature and parts of the food were. The food was stirred and placed complete on the hot holding surface to correct this. (Corrected On Site)  1005.1 Except during preparation, cooking, or cooling, or when time is used as the public health control as specified in Section 1009, potentially hazardous food (time/ temperature control for safety food) shall be maintained: (a) At fifty-seven degrees Celsius (57 degrees C) (one hundred thirty-five degrees Fahrenheit (135 degrees F)) or above, except that roasts cooked to a temperature and for a time specified in Section 900.2 or reheated as specified in Section 906.5 may be held at a temperature of fifty-four degrees Celsius (54 degrees C )(one hundred thirty degrees Fahrenheit ((130 degrees F)) or above. 22. - Temperature control for safety foods temp above 41 degrees F. The foods were using ice to hold cold. At the pizza station the pans were doubled which did not allow adequate contact. At the deli sandwich station there was insufficient ice. Both were corrected on site. (Corrected On Site)  1005.1 Except during preparation, cooking, or cooling, or when time is used as the public health control as specified in Section 1009, potentially hazardous food (time/ temperature control for safety food) shall be maintained: (b) At five degrees Celsius (5 degrees C) (forty-one degrees Fahrenheit (41 degrees F)) or less. 51. - The faucet/spray nozzle diverter knob at the 3-compartment sink is in disrepair. This does not affect the hot water supply. The establishment is using the spray nozzle to fill the rinse basin. (CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  2418.1 A plumbing system shall be: (a) Repaired according to the D.C. Plumbing Code (2008) incorporating the International Plumbing Code 2006, as amended by the D.C. Plumbing Code Supplement (subtitle F of 12 DCMR); and (b) Maintained in good repair.  
54. - The exterior of the grease bin is unclean. (CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  2715.1 A storage area and enclosure for refuse, recyclables, or returnables shall be maintained free of unnecessary items, and kept clean.
