OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
6. - Employee was observed drinking from an uncovered container in the food preparation area. Manager instructed employee to provide a lid and straw for container during the inspection. (Corrected On Site)  500.1 Persons working in direct contact with food, clean equipment and utensils, and unwrapped single-service and single-use articles shall not: (a) Eat, drink, chew gum, or use any form of tobacco, except in designated areas where food, clean equipment and utensils, and unwrapped singleservice and single-use articles are not exposed, and where equipment or utensils are not washed or stored; or (b) Drink, except from a closed beverage container if the container is handled to prevent contamination of the employee's hands or the container, where food, clean equipment and utensils, linens, and unwrapped single-service and single-use articles are exposed, and where equipment or utensils are washed or stored.  
10. - Kitchen handsink not accessible at the time of call, trash bags and other items stored in the handsink, items and clothing removed during the inspection. 16. - Unclean food-contact surfaces observed in the interior of refrigeration units and food cabinets throughout, coffee grinds,food spillage present. 28. - Observed improper storage of chemicals located in the basement storage room, containers of bleach stored next to single service items(cups). (CORRECT VIOLATION WITHIN 3 CALENDAR DAYS)  3400.1 Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by: (a) Separating the poisonous or toxic materials by physically separating or partitioning by a wall or structure; P and (b) Locating the poisonous or toxic materials in an area that is not above food, equipment, utensils, linens, and single-service or single-use articles. This paragraph does not apply to equipment and utensil cleaners and sanitizers that are stored in warewashing areas for availability and convenience if the materials are stored to prevent contamination of food, equipment, utensils, linens, and single-service and single-use articles. P  
28. - Working containers of chemicals that are removed from original containers are not name labeled. Unlabeled chemical bottles located in the dishwashing area properly labeled during the inspection. (Corrected On Site)  3302.1 Working containers used for storing poisonous or toxic materials, such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. 37. - Working containers of foods that are not easily recognizable are not name labeled. Sugar container labeled during the inspection. (Corrected On Site)  803.1 Working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the food, except that containers holding food that can be readily and unmistakably recognized, such as dry pasta, need not be identified.  
39. - Silver ton coffee station exposed to possible contamination, units stored on the service line in direct contact with the customers. Manager removed silver tons and stored them on the rear prep table during the inspection. (Corrected On Site)  820.1 Except for nuts in the shell and whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer before consumption, food on display shall be protected from contamination by the use of: packaging; counter, service line, or salad bar food guards; display cases; or other effective means. P  
40. - Food employees observed not wearing a hair restraints while working with open food. (CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  502.1 Food employees shall wear clean and effective hair restraints, such as hairnets or beard nets, if appropriate, and clothing that covers body hair that are designed and worn to effectively keep hair from contacting exposed food, clean equipment and utensils, linens, and unwrapped single-service and single-use articles. Hats, caps, scarves or other head covers are acceptable if the hair is contained to prevent contamination. Hair spray and tying back the hair in a ponytail are not effective hair restraints.  
49. - Observed unclean exterior surfaces of equipment throughout. (CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1900.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  
55. - Observed dirt and debris present on the floors underneath, between equipment throughout. Observed excessive build-up present in the mopsink. (CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  3201.1 The physical facilities shall be cleaned as often as necessary to keep them clean.  
56. - Observed lack of storage such as lockers or other suitable facilities to properly store employee's clothing and other possessions, employees storing clothing above the kitchen handsink, sink not accessible for proper handwashing.
