OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
2. - The person in charge is certified food protection manager, but he has not obtained a DC-issued Identification ID Card.  203.3 A person in charge who is a certified food protection manager as required in Section 203.1 shall obtain a District-issued Food Protection Manager Identification Card (ID Card), issued by the Department, and shall renew the District-issued ID Card every three (3) years. 10. - No soap provided at handwashing sink in toilet room.  3001.1 Each handwashing sink or group of two (2) adjacent sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Pf  
22. - Noted TCS foods, such as raw ground meat, raw fish, prepared meat, and other food have been held inside of refrigerator countertop unit, refrigerators reach in with improper cold holding temperatures. Internal temperatures range of 51 to 62 degrees F.  1005.1 Except during preparation, cooking, or cooling, or when time is used as the public health control as specified in Section 1009, potentially hazardous food (time/ temperature control for safety food) shall be maintained: (b) At five degrees Celsius (5 degrees C) (forty-one degrees Fahrenheit (41 degrees F)) or less. 33. - Refrigerator countertop unit, and refrigerators reach in have not been maintained food internal temperatures at least 41 degrees F or less.  1600.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified in chapters 6 through 13. 36. - No thermometers available inside or outside of refrigerator countertop unit and refrigerators reach in.  1524.2 Cold or hot holding equipment used for potentially hazardous food (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one (1) integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display, except as specified in Section 1524.3.  
38. - Noted rodent droppings in the basement.  3210.1 The premises shall be maintained free of insects, rodents, and other pests. The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: Pf (a) Routinely inspecting incoming shipments of food and supplies; Pf (b) Routinely inspecting the premises for evidence of pests; Pf (c) Using methods, if pests are found, such as trapping devices or other means of pest control as specified in Sections 3402, 3410 and 3411; Pf and (d) Eliminating harborage conditions. 38. - There is a hole on the door in the basement that leads to outside.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  2912.1 Except as otherwise specified in Sections 2912.2 through 2912.5, the outer openings of a food establishment shall be protected against the entry of insects and rodents by: (a) Filling or closing holes and other gaps along floors, walls, and ceilings; (b) Closed, tight-fitting windows; and (c) Solid, self-closing, tight-fitting doors.  
49. - Freezer reach in is accumulated with buildup ice and other dirt.(CORRECT VIOLATION WITHIN 14 CALENDAR DAYS)  1900.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  
51. - One of handwashing sinks at the kitchen is not in good repair.  2418.1 A plumbing system shall be: (a) Repaired according to the D.C. Plumbing Code (2008) incorporating the International Plumbing Code 2006, as amended by the D.C. Plumbing Code Supplement (subtitle F of 12 DCMR); and (b) Maintained in good repair.

For license to be restored, Your Restaurant Total has been closed for a violation or several violations of the District of Columbia Municipal Regulations (Title 25, Subsection A of the DCMR), which presented an imminent health hazard. A $100.00 fee is due for an inspection which takes place during normal inspectional hours. Fee must be paid before 2:00 pm. A request for a payment link can be made by emailing food.safety@dc.gov.
