OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
2. - Observed the person in charge is not certified by a food protection manager certification program that is accredited by the Conference for Food Protection Standards for Accreditation of Food Protection Manager Certification Programs.(Correct the cited violation within 5 calendar days)  203.1 Each person in charge shall be certified by a food protection manager certification program that is accredited by the Conference for Food Protection Standards for Accreditation of Food Protection Manager Certification Programs. Such certified food protection managers shall be deemed in compliance with Section 201.2(b). P  
10. - Observed one of the hand washing sinks in the front was blocked by trash can. (Correct the cited violation within 5 calendar days)  2414.1 A handwashing sink shall be maintained so that it is accessible at all times for employee use. Pf

(Correct the cited violation within 5 calendar days)  3002.1 Each handwashing sink or group of adjacent sinks shall be provided with: (a) Individual, disposable towels; Pf (b) A continuous towel system that supplies the user with a clean towel; Pf (c) A heated-air hand drying device that is provided in addition to other hand-drying devices at sinks used for food preparation or warewashing areas; Pf or (d) A hand drying device that employs an air-knife system that delivers high velocity, pressurized air at ambient temperatures. 13. - Observed dented can of pineapple on the shelf at at the dry food storage area. (Correct the cited violation within 5 calendar days)  711.1 Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. 35. - Observed an improper thawing of salmon and chicken in the one compartment sink. (Correct the cited violation within 14 calendar days)  1001.1 Frozen potentially hazardous food that is slacked to moderate the temperature shall be held: (a) Under refrigeration that maintains the food temperature at five degrees (5 degrees C) (41 degrees F) or less; or (b) At any temperature if the food remains frozen.  
36. - Observed no thermometer in one of the under counter refrigerator. (Correct the cited violation within 14 calendar days)  1524.2 Cold or hot holding equipment used for potentially hazardous food (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one (1) integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display, except as specified in Section 1524.3.  
37. - Observed working containers not labeled properly. (Correct the cited violation within 14 calendar days)  803.1 Working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be identified with the common name of the food, except that containers holding food that can be readily and unmistakably recognized, such as dry pasta, need not be identified.

(Correct the cited violation within 14 calendar days)  3211.1 Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
