OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
10. - There is no water provided to the toilet room handwashing sink. The water line is damaged and leaking. The water has been shutoff.  2402.1 A handwashing sink shall be equipped to provide water at a temperature of at least thirty-eight degrees Celsius (38 degrees C) (one hundred degrees Fahrenheit (100 degrees F)) through a mixing valve or combination faucet. Pf  
10. - There are handwashing aids at the bar 2-compartment sink.  3003.1 A sink used for food preparation or utensil washing, or a service sink or curbed cleaning facility used for the disposal of mop water or similar wastes, shall not be provided with the handwashing aids and devices required for a handwashing sink as specified in Sections 3001, 3002, and 2706.3.  
10. - The bar handwashing sink is obstructed by a preparation 72" refrigerator. The drawings show a glasswasher planned for the area.  2411.1 A handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and warewashing areas, and in, or immediately adjacent to, toilet rooms. Pf  
16. - The sanitizer concentration at the kitchen 3-compartment sink is in excess of the manufacturer's use directions.  1813.4 A quaternary ammonium compound solution shall: (a) Have a minimum temperature of twenty-four degrees Celsius (24 degrees C) (seventy-five degrees Fahrenheit (75 degrees F)); P (b) Have a concentration as specified in Section 3404 and as indicated by the manufacturer's use directions included in the labeling; P and (c) Be used only in water with five hundred micrograms per liter (500 mg/L) hardness or less, or in water having hardness no greater than specified by the EPA-registered label use instructions. P  
48. - There is only a 2-compartment sink at the bar. The plans call for a glasswasher and 2-compartment sink. The glasswasher was relocated to the kitchen.  1601.4 Before a two (2)-compartment sink is used: (a) The licensee shall have its use approved; and (b) The licensee shall limit the number of kitchenware items cleaned and sanitized in the two (2)-compartment sink, and shall limit warewashing to batch operations for cleaning kitchenware such as between cutting one type of raw meat and another or cleanup at the end of a shift, and shall: (1) Make up the cleaning and sanitizing solutions immediately before use and drain them immediately after use, and (2) Use a detergent-sanitizer to sanitize and apply the detergentsanitizer in accordance with the manufacturer's label instructions and as specified in Section 1814; or (3) Use a hot water sanitization immersion step as specified in Section 1909.1(c).  
51. - There is no backflow device for the garbage disposal. The water supply for the unit is not connected and water sprays in the air when turned on.  2401.1 A plumbing system shall be designed, constructed, and installed according to the D.C. Plumbing Code (2008) incorporating the International Plumbing Code 2006, as amended by the D.C. Plumbing Code Supplement (subtitle F of 12 DCMR). P  
53. - The toilet room does not have a covered receptacle for the disposal of feminine hygiene products.  2707.1 A toilet room used by females shall be provided with a covered receptacle for feminine hygiene products.

55. - There are unsealed joints of FRP in the kitchen with open seams and corners lacking covers. There is missing and unfinished gypsum wall board exposed in the kitchen. Unsealed wood is used to support the grease interceptor.  2802.1 Except as specified in Section 2802.2, materials for indoor floor, wall, and ceiling surfaces under conditions of normal use shall be: (a) Smooth, durable, and easily cleanable for areas where food establishment operations are conducted; (b) Closely woven and easily cleanable carpet for carpeted areas; and (c) Nonabsorbent for areas subject to moisture such as food preparation areas, walk-in refrigerators, warewashing areas, toilet rooms, mobile food establishment servicing areas, and areas subject to flushing or spray cleaning methods.  
55. - The waste line for the ice maker runs along the bar floor.  2901.2 Exposed utility service lines and pipes shall be installed so they do not obstruct or prevent cleaning of the floors, walls, or ceilings.  
55. - Kitchen floors are not coved and sealed to the wall. A rubber wall base sits on top of an epoxy-like floor.  2902.2 The floors in food establishments in which water flush cleaning methods are used shall be provided with drains and be graded to drain, and the floor and wall junctures shall be coved and sealed.
