OBSERVATIONS 25 DCMR CORRECTIVE ACTIONS
10. - There is a single handwashing sink in the kitchen for both food handling and warewashing activities. There is no handwashin sink behind the bar.  2411.1 A handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and warewashing areas, and in, or immediately adjacent to, toilet rooms. Pf  
33. - The walk-in refrigerator was off at the time of arrival. The unit was 45F by the end of the inspection. A bar reach-in was 44F.  1600.1 Equipment for cooling and heating food, and holding cold and hot food, shall be sufficient in number and capacity to provide food temperatures as specified in chapters 6 through 13. Pf  
36. - Refrigerators lack thermometers.  1524.2 Cold or hot holding equipment used for potentially hazardous food (time/temperature control for safety food) shall be designed to include and shall be equipped with at least one (1) integral or permanently affixed temperature measuring device that is located to allow easy viewing of the device's temperature display, except as specified in Section 1524.3.  
38. - There are dead roaches in the kitchen area.  3211.1 Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.  
47. - The is exposed particle board at the coffee area counter.  1408.1 Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion resistant, nonabsorbent, and smooth material.  
47. - The bar sink is not fixed to the wall.  1701.1 Equipment that is fixed because it is not easily movable shall be installed so that it is: (a) Spaced to allow access for cleaning along the sides, behind, and above the equipment; (b) Spaced from adjoining equipment, walls, and ceilings a distance of not more than one millimeter (1 mm) or one thirty-second of an inch (1/32 in.); or (c) Sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage.  
49. - Bar refrigerators are unclean.  1900.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.  
51. - The faucets at the bar 3-compartment sink and kitchen handsink leak. The dish area spray nozzle and toilet room urinal are in disrepair.  2418.1 A plumbing system shall be: (a) Repaired according to the D.C. Plumbing Code (2008) incorporating the International Plumbing Code 2006, as amended by the D.C. Plumbing Code Supplement (subtitle F of 12 DCMR); and (b) Maintained in good repair.  
55. - Old or unused equipment and construction materials stored in the establishment.  3213.1 The premises shall be free of: (a) Items that are unnecessary to the operation or maintenance of the establishment such as equipment that is nonfunctional or no longer used; and (b) Litter.  
56. - Lightbulds are not shield in the kitchen closet.  2908.1 Except as specified in Section 2908.2, light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, linens, or unwrapped single-service and single-use articles.
